Agria potatoes are the heart of Friet van Beus. From September to July we cut our fresh chips from this variety, and we also supply Agria as whole chipping potatoes to businesses that prefer to cut their own. Every Agria potato you receive from us has been grown, lifted and graded on our own farm in Zeewolde.
Agria has a long oval shape and yellow flesh. Those long tubers are handy when cutting: you get nice long chips and are left with few short offcuts. The variety is known as floury. That comes from its relatively high dry matter content, in other words plenty of starch and little water. A floury potato turns light and soft inside in the fryer, while the outside develops a firm crust.
Just as important is the low sugar content. Sugars in the potato turn brown in hot oil. A variety with little sugar therefore gives evenly golden chips that do not darken too quickly. That looks better on the plate and also helps limit acrylamide, a substance that forms when chips are fried too dark. Read more under acrylamide in chips.
In short, Agria chips hold few surprises in the fryer. For a business where portions go over the counter one after another during the rush, that predictability is worth a great deal.
The new Agria comes out of the ground at the end of the summer. As soon as it is good enough for the fryer in September, we cut chips from it again, and well-stored Agria then stays suitable for months. That is why it is our standard chipping variety from September to July. In those months all our fresh chips come from Agria.
In August the old crop runs out, while the new Agria is not quite ready yet. For those few weeks we therefore switch to the early Frieslander, a transition potato that crisps quickly and keeps well. By September the new Agria is usually good enough and we switch back. When each variety is at its best with us is explained on the page about the potato season.
You can take Agria from us in two ways. The first is as fresh Agria chips: cut on Tuesday and Friday mornings, vacuum-packed and delivered by us. All you then need to do is blanch and finish them. The second is as whole chipping potatoes. We wash and grade those every week on the farm, gently, so the tubers are not damaged. Handled this way, they keep for a long time.
Whole potatoes are worth considering if you have your own chip cutter or want your own cut, such as thick steakhouse chips or skin-on chips. Cutting your own saves costs, although it does take some time in the kitchen. Which form suits you depends on your business and your staff. Whole potatoes can be delivered nationwide. The page on peeled potatoes for catering explains the options.
Would you like to buy Agria potatoes for your cafetaria, chip shop or wholesale business? We supply businesses only, straight from the farm. Because we grow everything ourselves, you know exactly where your potatoes come from and the quality stays the same throughout the season. Everything you want to know about agria potatoes.
Agria is floury. Its high starch content makes it soft and fluffy inside. That makes it very well suited to chips, and also to mash or sautéed potatoes.
The variety is naturally low in sugar. Sugars turn brown in the fryer, so with little sugar the chips stay evenly golden. The yellow flesh enhances that colour further.
From September to July. Only in August do we cut Frieslander, because the old Agria is running out and the new crop is not yet ready for the fryer.
Cool, dark and dry, but not in the fridge. Below about six degrees starch turns into sugar, which makes the chips fry darker. Also keep the potatoes out of the light so they do not turn green.
Yes. The Agria chipping potatoes are washed and graded on the farm every week. You can take them peeled or unpeeled.
